    “The little new potatoes are so good. We love them this easy no fuss way.”

    Ingredients

  • 1 1/2 lbssmall new potatoes
  • 1/2 cupbutter, melted
  • 1/4 cupminced fresh parsley
  • salt and pepper
  • Directions

  • In medium pot, bring 2 qts water and 1 t salt to a boil.
  • Cut a ring around the middle of each potato.
  • Drop potatoes in boiling water, bring back to the boil.
  • Reduce heat to simmer and cook until potatoes are tender, about 10 minutes, depending on size of potatoes.
  • Drain well.
  • Add butter and parsley.
  • Toss to coat well.
