    “Spinach and strawberries what an odd combination for a recipe. That is what I thought before trying this the first time. Now I get many requests to bring this for dinner parties. The raspberry wine vinegar adds a marvelous taste, and compliments the first two ingredients. This salad is very eye pleasing in crystal.”

    Ingredients

  • 1lbspinach( I pinch off the larger stems)
  • 1pintstrawberry, sliced set a few aside( egg slicer works wonders)
  • 1/2 cuppecans, toasted
  • DRESSING

  • 1/3 cuproland raspberry red wine vinegar
  • 1/2 cup sugar or 1/2 cupsugar substitute
  • 1teaspoondry mustard
  • 3/4 cupvegetable oil
  • 2teaspoonspoppy seeds
  • Directions

  • Toast pecans over low heat, set aside to cool.
  • Combine dressing ingredients and shake well.
  • Toss and garnish with a few sliced strawberries.
  • Serve immediately.

I used 1/2 bag spinach, and 1/2 bag of mixed greens (spring mix). I added a whole container of feta cheese, and lastly, I bought raspberry vinegarite salad dressing instead of making my own. My husband turned his nose up as he saw the bottle, thinking he is not going to like it.. WRONG!!! He loved it, as did I. The Raspberry Vinagirette dressing ties all the ingredients together..
