Easy but Elegant Chicken Supreme

    “This is a family favorite, and a great dish to make for company especially if you are short of time.”

    Ingredients

  • 1/3 cupdried breadcrumbs
  • 7teaspoonsflour, divided
  • 9ouncesboneless skinless chicken breasts
  • 1egg, slightly beaten
  • 2teaspoonsmargarine
  • 2teaspoonsoil
  • 1/2 cupsliced fresh mushrooms
  • 1/4 cupcanned chicken broth
  • 1/4 cupdry white wine
  • 1ounceprovolone cheese, cut into strips
  • Directions

  • In a shallow bowl or on a paper plate, combine the bread crumbs and 2 Tbsp of flour; dip chicken into egg, making sure all sides are coated, then dredge in crumb mixture.
  • Repeat process, being sure to cover the chicken entirely.
  • In a 10 inch nonstick skillet, combine the margarine and oil.
  • Heat over a medium heat until the margarine is bubbly and hot.
  • Add chicken and cook, turning once, until both sides are lightly browned and chicken is cooked through, 2-3 minutes on each side.
  • Transfer to a plate and keep warm.
  • To the same skillet add the mushrooms and saute until lightly browned, 1-2 minutes; sprinkle with remaining teaspoon of flour and stir quickly to combine.
  • Add broth and wine.
  • Cook, stirring constantly, until mixture thickens, about 1 minute.
  • Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2-3 minutes.Garnish with parsley.

  • “We loved this chicken! It’s so fast and easy to prepare, yet delicious! I had to use italian seasoned bread crumbs, I was out of plain, but it just added a bit more flavor. I also had to leave out the mushrooms, dh and kids are picky, lol. I cut the breasts into fillets, and gave them 3 minutes on one side, 2 on the other, removed them from the pan, added the broth/wine mixture, and cooked it for 1 minute. Then added the chicken back in, and put the cheese over. After 3 minutes, they were perfectly done–but still so juicy! My dh went back for seconds, and my oldest cleaned her plate. That alone is worth more than 5 stars in my book! If anyone is looking for a quick, but great chicken dish, this is it! Very easy to prepare and with great rewards. I also had to use Italian breadcrumbs and I also added cracked pepper and salt. I served this on top of buttered spaghetti and we dined like kings in the dining room — this dish is much too nice to eat in the kitchen! I would certainly feed this to company! I did let my chicken sit and simmer for about 20 minutes as DH was running a little late, but it was fork tender. Another keeper from you…thank you!”

  • “SUPER, SUPER GOOD!!!I was looking for an easy but tasty sounding dish and this was it!!!I doubled the recipe to serve 4 but only used 1 egg.I added some garlic powder and crushed red pepper to my breading mixture and used chicken bouillion/water.Worked wonderful!!The mushrooms tasted fantastic in this sauce and provolone added great flavor as well, although my 4 year old wouldn’t try it because he said it smelled “stinky”.Had a strong smelling but mild tasting provolone.Oh well…more for me!GREAT recipe and highly recommend.I paired this tonight with recipe #326987 and recipe #59965.Ate GREAT!”
