Grandma’s Apple Muffins

  • Ingredients

  • 1/4 cupbrown sugar
  • 1cupsugar
  • 2cupsall-purpose flour
  • 1 1/2 teaspoonsbaking powder
  • 1teaspooncinnamon
  • 1/2 teaspoonsalt
  • 1/3 cupmelted butter
  • 1egg
  • 1cupmilk
  • 1apple, peeled and finely chopped
  • Directions

  • combine first 6 ingredients in a large bowl and mix well.
  • stir in the liquids and then the chopped apple.
  • spoon into greased muffin tin about 2/3 full.
  • bake at 400-f for 20-25 minutes.

  • “i had to use skim milk but i did use real homemade butter. i also used 1 3/4 large gala apples since i’m of the opinion that fruit muffins should contain **FRUIT!** and not just fruit. everything else i went by the recipe. this filled 12 muffin tins to a little overflowing but i like it that way since it means nice full fluffy muffins. these didn’t expand as much as i was expecting but they were still a good size and not overly sweet. i think they would have been better with granny smith apples or another tart, sturdy type and maybe a bit more cinnamon but these were really tasty. more summery tasting than fallish but that’s ok. might taste more like fall if i added a bit of cloves and nutmeg for depth. thanks!”

I also added a handful of chopped walnuts to the streusel, which created an excellent texture contrast. I will probably reduce the butter next time to make them more healthful.”

I used fuji apples…and I was so lazy, so I just used 1 and a half cups of Self raising flour and half a cup of regular flour…I also sub. the oil with applesauce….came out lovely!!
