Ingredients
1smallonion, diced
25gbutter
1kgpumpkin, peeled and seeded
5cupschicken stock
1cuporange juice
1orange, zest of
1tablespoonsugar
salt & pepper
1orange, thinly sliced
Directions
Saute onion gently in butter in a large saucepan until transparent.Add chunks of pumpkin, stock, juice, zest and sugar.
Simmer 20-25minutes until cooked.
Puree in a food processor or blender or pushthrough a sieve. Return to saucepan, add sliced orange and reheatgently for 10 minutes.
